  • Almond extract – If you do not have almond extract, you can use a bit of vanilla extract. However, the slight nutty flavor that almond extract adds a great touch to the white chocolate and raspberry flavors.
  • Egg – Allow the egg to come to room temperature before mixing it into the cookie dough.
  • Frozen raspberries – Feel free to use fresh raspberries, but I find that it is much easier to work with frozen raspberries. There is less smushing and exploding of fruit as I mix the dough together!

How to Make White Chocolate Raspberry Cookies

Begin by preheating your oven to 350 degrees Fahrenheit and then line two baking sheets with parchment paper and set them to the side.

Add the salted butter, white sugar, and brown sugar to a large mixing bowl or the bowl of a stand mixer. Beat with a hand mixer or stand mixer until well combined.

Mix in an egg and the almond extract and beat until smooth.

Slowly add the flour to the wet ingredients and combine until a smooth dough forms. Be careful not to over mix.

Pour the white chocolate chips into the dough and mix well.

Gently fold the frozen raspberries or fresh berries into the cookie dough with a mixing spoon or silicone spatula.

Store leftover cookies in an airtight container at room temperature for 3-4 days. You can also freeze leftover cookies! Just transfer them to a freezer bag or airtight container and store in the freezer for 1-2 months. Allow to thaw before eating.

Can I make this cookie dough ahead of time?

I personally prefer to make the dough and bake immediately since waiting will allow the raspberries to soften. However, storing the cookie dough in the fridge or freezer before baking shouldn’t effect the bake too much! You can store cookie dough covered in the fridge for about a day.

Or, make the cookie dough balls, freeze them on a cookie sheet and then transfer to an airtight container. Then you can freeze them for 2-3 months and bake whenever you’re ready for a warm and gooey cookie!

Can I use regular chocolate instead of white chocolate?

Of course! Dark chocolate pairs really well with raspberries and would be super tasty in this recipe. But you could also use semi-sweet chocolate or milk chocolate if you prefer.

Pro Tips for the Best White Chocolate Raspberry Cookies

  • I don’t recommend using a stand mixer or hand mixer to mix the fruit in, as it will break more of the berries. Just use a silicone spatula or mixing spoon to fold the berries into the dough.
  • Don’t overmix the cookie dough or the cookies could end up with a funny texture. Once the dough is combined, it’s good to go!
  • For extra chocolate and a pretty final product, press a few extra white chocolate chips into the tops of cookies before baking.
