From about the age of 25 to 30, I was a pescatarian. I ate a diet primarily of grains, fruits, vegetables, and dairy, with the occasional seafood. While pregnant with Bryce, I reintroduced beef, poultry, and pork back into my diet, but I wanted to make sure I did so in a very intentional way. I only selected high-quality meat, and 8 years later, I still try to get the most out of each piece of meat that I select. One way to do that is to use a great piece of beef to make a sandwich, like this Ribeye Steak Sandwich with a from-scratch blue cheese dressing, caramelized onions, and arugula. One USDA Prime ribeye steak from The Fresh Market will make two sandwiches, so I purchased two steaks to feed my family of four. Be sure to head to the bakery for fresh bread, produce section for fresh vegetables, and floral section to grab a nice bouquet of flowers, too!

Ribeye Steak Sandwich Ingredients:

  • Two 10-ounce ribeye steaks
  • Loaf of ciabatta bread
  • Medium-sized onion
  • Baby arugula
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1/2 t Worcestershire sauce
  • 1/2 t poppy seeds
  • 1 clove garlic
  • 1 t fresh thyme
  • 1 T butter
  • 1 T olive oil
  • salt + pepper, to taste

Ribeye Steak Sandwich Directions:

The first step in preparing this Ribeye Steak Sandwich is to pick out a great steak. The trick to making a delicious steak is to look for good marbling – that’s the amount of fat that is distributed throughout the steak. The better the marbling, the juicier the final product. To prepare the steak, I patted it dry and generously coated both sides in salt, pepper, and fresh thyme. I placed half a tablespoon of butter and half a tablespoon of olive oil in a sauté pan, and set it on a medium-high burner. The reason I combine the two is because oil has a higher smoking point, but butter imparts a better flavor, so by combining the two, I can get the perfect sear on my steak. Cook on the first side until you have a nice brown crust, flip it over, and cook on the second side. Throughout the cooking process, spoon the butter and oil mixture over the top. I like my steak cooked to a medium-rare, which means both sides are cooked through, but the center is still a nice pink color. If you touch the cooked steak, it will have some give still. The firmer it is, the more well done it is. Set your steak aside for about 10 minutes before slicing so the juices will stay inside it.

While the steak is cooking, caramelize your onions. Begin by slicing them thinly. Place the remaining half a tablespoon of butter and half a tablespoon of olive oil in a sauté pan. Over a medium-low heat, slowly cook them until they are translucent, tender, and sweet. You can even add a touch of honey for an extra pop of sweetness.

The final component is the blue cheese dressing. You can purchase a blue cheese dressing at the store, but it’s so much better from scratch. In a small bowl, combine the mayonnaise, blue cheese, poppy seeds, and one clove of minced garlic. Add salt and pepper to taste. Slice your ciabatta bread to the size of each sandwich, gently toast it, and your sandwiches are ready to assemble:

  • Spread the blue cheese dressing on one side of the bread.
  • Add a layer of arugula.
  • Add a layer of caramelized onions.
  • Top with thinly sliced ribeye steak.
  • Add the other side of bread.

My daughter only wanted the steak and plain blue cheese on the toasted ciabatta. My son wanted extra onions and arugula, just a few pieces of steak, and Richard and I prepared it according to the directions above. Now that the weather is cooling down, this is an awesome sandwich to enjoy outdoors.
