How to Make Bourbon Chicken and Rice in a Slow Cooker

A reader favorite recipe (and a family favorite recipe) is my Crock Pot Bourbon Chicken recipe. Everyone LOVES the flavor of this recipe! It is absolutely delicious. So I took that recipe and added in the rice to the cooking. This takes the extra step of cooking the rice separately away and thickens the sauce while it is cooking! This Crock Pot Bourbon Chicken and Rice is a win win!
The original recipe has a thin sauce that needs to be thickened. With cooking the rice in the crock pot with the chicken and sauce, the rice soaks up the extra juices leaving you with a delicious sauce. Since the rice and the chicken are both cooked in the sauce, the flavor is phenomenal!
For this recipe, you will want to use long grain long cooking rice. If you use minute rice, it will turn to mush before the recipe is done. An easy way to see if the rice you have is long cooking is to look at the cooking time on the back of the package. If it can be cooked in 5 minutes, that is not the right kind. Look for the one that takes about 15-18 minutes to cook. One of my favorite long cooking rices is Basmati. It seems to do really well in crock pot recipes. However, if you can’t get Basmati, regular long grain long cooking rice will work just fine.
Know your slow cooker any time you are cooking rice in a recipe. I can’t tell you enough how important this is! If your crock pot doesn’t cook evenly or cooks too hot or cooks too slow, it can ruin a recipe with rice in it. That is why I usedmy insulated Hamilton Beach slow cooker. It cooks perfectly and evenly, so I know that I am not going to have hot spots that turn the rice to mush or slower cooking spots that leave me with crunchy rice. This is not a recipe to try out on your new crock. Use your tried and true, favorite crock pot that you know cooks evenly.

Ingredients
- 1.5 lb boneless skinless chicken , cut into bite-size pieces
- 1/2 cup teriyaki sauce
- 1/2 cup chicken broth or bourbon
- 2 Tablespoons honey
- 1 teaspoon mustard
- 1/2 cup brown sugar
- 1 teaspoon garlic powder
- 2 Tablespoon dried minced onions
- 1/8 teaspoon ground ginger
- 1/2 cup water
- 1 cup long-cooking rice
Instructions
Spray your crock pot with cooking spray
Place your chicken pieces in your crock pot
Mix together remaining ingredients (except for rice) until well blended
Add your rice to your sauce mixture
Pour over chicken and stir until everything is well combined
Cover and cook for 2-4 hours on low, stirring occasionally (It is done when your chicken is cooked through and your rice is plump)

A hot cooking slow cooker will make your rice mush. A cool cooking slow cooker will not cook your rice as quickly. Hot spots will give you some over cooked rice while the other rice is undercooked.

I tried this recipe as written with basmati rice. The rice never cooked up after 4 hrs on low. I tried cooking on high for 30 mins & rice was still not done. I transferred the contents to a pan. & cooked on medium on the stove for about 30 more minutes. The rice finally cooked, but was soggy & really soaked up the alcohol flavor. Couldn’t eat it. I would recommend cooking the rice separately from the chicken.Reply

I hate to hear that Polly! It sounds like your slow cooker cooks cooler than mine. It sounds like your slow cooker may need closer to 5 or 6 hours on low for this recipe. All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed. I haven’t tried this with any kind of bone-in chicken. My concern would be that the rice would be done before the chicken cooked fully through. If you give it a try, watch it closely, use a meat thermometer to make sure your chicken is completely cooked and let me know how it goes!

I’m so sorry to hear it Cindy! It sounds like your crock pot cooks hotter than mine, so the recipe was done sooner. If you try it again, I would suggest using a crock pot that cooks cooler or checking it earlier in the cooking. We always say to watch a recipe closely the first time you make it to adjust the cooking time as needed, but it is very important when cooking with rice. Rice isn’t the easiest thing to cook in a crock pot and has to be watched closely each time. I hope this helps!

I have a question on the basmati rice. Do you soak it and rinse it well prior to using it in this recipe?

I super-love this recipe, and my WHOLE FAMILY (8 children, though one is not yet on our food) devours it and asks for more every time!! My only problem is that I have a really hard time getting the rice to be tender in any kind of reasonable time. I use jasmine rice, which typically cooks in about 20 min at a simmer. The first time I made this recipe, I ended up fishing the chicken out and transferring the rice to a stove top to finish. I’ve also experimented with beginning the saucy rice several hours before putting the chicken in, but the rice still has noticeable texture even when it cooks for 3 hours before adding chicken (and 3 more hours after adding chicken). And I have to add a pretty significant amount of liquid to it. Any idea what I could try different next time? I would rather not use minute rice, and I really love the rice cooked in all the yummy sauce, so I would rather not cook it separately.Reply

Hmmm…I usually have good experience with jasmine rice in slow cooker recipes. Have you ever tried basmati? It is my favorite to use in slow cooker recipes. Have you ever noticed your slow cooker cooking “cool” on other recipes?Aunt Lou
