The first taste

The first time I ever tried a Clover Club co*cktail was a couple years ago at a special blogger event held at The Lynhallin Minneapolis. It was a berry-themed event, and since traditionally clover clubs are made with raspberry syrup, it made sense to serve this delightful drink.

Served in small coupe glasses, I was intrigued by this drink, as I’d never even heard of it before. The vibrant color and the odd foamy head was an instant draw, and I’m glad I gave it a chance!

After that, I made it my mission to serve this co*cktail at gatherings, and I’ve played with the recipe too, swapping berries, swapping citrus, and adding a splash of 7UP. Clover Club co*cktail ingredients

The absolute basic clover club consists of:

  • dry gin
  • raspberry syrup
  • fresh lemon juice
  • egg whites

Super simple, right?

For this version, we’re using the same ratios, but playing with the ingredients a bit.

  • we’re swapping the raspberries for blueberries!
  • instead of all lemon juice, we’re using just a single squeeze and replacing the rest with 7UP

You can do a lot with 7UP, so I always pick up a pack when I’m at Target. It’s easy, it’s fun, it’s flavorful, like my mango sheet cake!

Can you make a Clover Club co*cktail without egg whites?

If you did, it wouldn’t be a Clover Club!

The egg white is simply an emulsifier, meaning, it creates the heady foam on top of the co*cktail. The egg white lends no flavor to the drink at all.

To get the best foam, be sure to use the freshest eggs possible. I’ve tried with both fresh eggs and liquid egg whites, and I definitely had a better result with fresh eggs.

How to make a Clover Club co*cktail

It’s super easy!

  • make the blueberry syrup, which only takes about 5-10 minutes by bringing a pot of blueberries and water to a low boil, then strain.
  • add the gin, syrup, lemon juice, 7UP, and egg white to a co*cktail shaker with no ice and give it a dry shake.
  • add some ice and then shake it again.
  • strain into a coupe glass and enjoy!

Ingredients

Blueberry Syrup

  • 1 cup fresh blueberries
  • ½ cup water
  • 1 tablespoon sugar

Clover Club

  • 1 ½ oz gin
  • ¾ oz blueberry syrup
  • ¼ oz fresh lemon juice
  • ½ oz 7UP®
  • ½ oz fresh egg white

US Customary - Metric

Instructions

  • Combine the blueberries and water in a small pot and bring to a low boil. Allow to cook untouched for 5-10 minutes, or until the berries release their juices and the color of the water matches the color of the blueberries. Strain into a cup, then stir in the sugar until it dissolves. Let cool.

  • In a co*cktail shaker, add the gin, syrup, lemon juice, 7UP, and egg white. Dry shake without ice for a full 10 seconds, then add a scoop of ice and wet shake for an additional 10 seconds. Strain into a small coupe glass and serve immediately. Please enjoy responsibly.
